A species of onion among my personal top favorites- it’s a hardy perennial with some unique features that make them an amazing, bountiful semi-passive crop! After planting the bulbs, the plants shoot out edible dark green, long hollow stalks. The tops of these stalks produce small “mini bulbs” (also known as bulbils) every fall. As these mini bulbs get bigger, the stalks fall over and self-plant new patches. Each patch can be harvested the first season OR (this is where it gets awesome) can be left in the ground and harvested for greens and mini bulbs for up to a decade or more. But that’s not even the best part. The in ground bulbs ALSO multiply and grow year after year. When you do harvest the in-ground bulbs, leave the one or two largest ones in the ground and harvest the rest. Do this and not only will you get passive onions year after year, but the underground bulbs will get slightly bigger and bigger with each new generation. Egyptian Onions are one of my top recommendations for staple crops in almost every environment and syntropic Sylvaflux system.
