Jicama is a climbing legume vine with heart-shaped green leaves, twining stems, and soft blue or purple flowers. Above ground, it grows as a vigorous vine that climbs supports and nearby plants, while underground it forms large, round, crisp tubers. The tubers make for a great crunchy snack through the summer and fall, and can store for several months in the right conditions.

•Produces large tubers that can reach up to anywhere from 6-8 inches thick! These are edible.
•Tubers can be eaten raw or cooked and have a sweet, juicy, crispy texture. I personally love to chop the roots up and eat them raw as a sweet snack.
•Known to aid in gut health and hydration, and is known to have a cooling effect in traditional Chinese Medicine.
